Makimaki Sushi is a fast-casual sushi bar concept that leverages robotics, particularly Suzumo's advanced machines. We utilize their rice washer, sushi rice mixer, rice sheet maker, and roll cutter, among other equipment. By integrating these robotic solutions with our innovative sushi roll-making process, we’ve earned the unofficial title of the fastest sushi bar (focused on sushi rolls) in NYC. This achievement allows us to handle operations that would be impossible with a traditional team of chefs.
